Autumn is outside the window, and that means it’s high time to revise the menu and include more warming and nourishing dishes. These simple dinner dishes will give you strength, improve your mood and warm you up on a rainy day!
A delicious, filling soup with a hint of garlic and warming ginger. The addition of turmeric gives the soup a warm shade of yellow and a spicy aroma.
Rinse the lentils well. In a large pot, heat the oil, throw in the chopped garlic, ginger and onion. Sauté for 3-5 minutes, until the ingredients are glazed. Add peeled and diced potato, turmeric, chopped tomatoes, lentils, salt, pepper and bay leaf. Pour broth over the whole thing and stir. Increase the heat and bring the soup to a boil. Once it is boiling, reduce the heat and simmer for 25-30 minutes under the lid. Blend the cooled soup, add cream and apple cider vinegar to it. You can sprinkle the finished dish with freshly ground black pepper, grated Parmesan cheese, sesame seeds and greens. Enjoy!
A simple, yet exquisite salad. Fried chicken fillet goes perfectly with fresh vegetables and a sweet dressing of yogurt, blue cheese and honey.
Wash the chicken filet, dry it and cut it into medium pieces. Rub them with salt and pepper. Heat a frying pan and fry the chicken pieces in clarified butter until they are browned. When they are ready, transfer them to a plate and cool slightly. Prepare the sauce: in a small bowl, mix yogurt, crumbled blue cheese, lemon juice, honey and milk. Salt and pepper to taste. Then wash the lettuce and shred it into smaller pieces with your hands. Transfer to a salad bowl, add the halved cherry tomatoes and cilantro. Place the chicken pieces on top. Pour the whole thing with yogurt sauce and serve to the table. Enjoy!
Pasta with smoked tofu poured with a thick creamy sauce will give you a boost of energy for hours.
Cook the noodles. Heat olive oil in a frying pan, add finely chopped garlic and onion and fry them until golden. Add diced tofu and herbs de Provence. Fry the whole thing for about 2 minutes. Add flour and fry for another minute. Then pour the contents of the pan with tomato sauce and broth. At this stage, throw in the peppers and chilies. Bring the whole thing to a boil, and when it boils, reduce the heat and cook, stirring all the time, for 6-7 minutes. When the sauce thickens slightly, add the pasta and cream. Stir, salt and pepper the whole thing to taste. Sprinkle the finished pasta with grated cheese and garnish with basil leaves. Enjoy!
In taste the dish resembles stuffed cabbage, but it is much simpler and faster to prepare. The next day the dish will be even tastier and more pronounced in flavor.
Place a deep skillet over medium heat and melt a tablespoon of clarified butter. Fry the onion and carrot until soft, pour in the tomato paste, stir and add pieces of any meat. Sauté, without stopping to stir, for about 10 minutes. Add salt. Then add shredded cabbage to the pan and pour half a cup of water. Simmer the whole thing covered for 10 minutes. Pour in the rinsed rice, add another third of a cup of hot water if necessary, add spices and simmer covered for 15-20 minutes until the rice is tender. Done!
